Hi Meagan! Hm, I’d say the issue is a combination of the different flours and the sourdough starter. The bread is intended to be a sweet, more dense bread rather than fluffy like sandwich bread. Also, those flours absorb moisture much differently than oat flour, so it’s not a simple 1:1 swap. I would suggest making the recipe as is, and if you need to swap out the oat flour try a GF blend. Just know that those also work differently from brand to brand, so it might take a few tries to find the one that works for your needs. Hope this helps!

Love this recipe! I’m GF and love making Banana Bread for the fam. Now I can enjoy too. Made this yesterday and my 7 year old loves it! I did add maybe a 1/4 tsp salt and sprinkled some on top as well before going into the oven. I also omitted the refined sugar. I figured between the banana, maple syrup and chocolate chips, that was enough, and it was. Came out great!
