They’re so easy to make, taste amazing and are made with simple, whole ingredients. What’s not to love?

How to Make Vegan Peanut Butter Chocolate Chip Cookies 

Preheat

Preheat your oven to 350°F. Then, line a baking sheet with parchment paper.

Whisk the Dry

Simply add all of your dry ingredients to a large mixing bowl: oat flour, baking powder, baking soda and salt. Whisk everything together until well mixed.

Whisk the Wet

Now, add all of your wet ingredients to a medium mixing bowl: peanut butter, coconut oil, coconut sugar, maple syrup, flax egg and vanilla. Whisk until well mixed.

Combine

Pour the wet ingredients over the dry ingredients. Grab a rubber spatula and stir & fold it all together until no flour patches remain. Now you have a soft and moist peanut butter cookie dough. Fold in vegan chocolate chips.

Scoop

Grab your cookie scoop, then scoop and drop cookie dough balls onto the prepared baking sheet. Flatten, then press chocolate chips into each cookie ball.

Bake, Cool and Enjoy (and maybe Repeat)

Tips for the Best Vegan Peanut Butter Chocolate Chip Cookies

Stir your natural peanut butter

Natural peanut butter is a staple in my kitchen, but it can be a real treat to deal with. If you know what I mean. 😉 Natural peanut butter can separate very quickly—so you have peanut oil and peanut paste, not peanut butter. Lol. When you buy a new jar, make sure to stir it very thoroughly and give it a stir every time you use it. This ensures the right amount of oil and paste (as it were lol) in your vegan peanut butter cookies. 

Use your favorite vegan chocolate chips

I have three go-to vegan chocolate chips that I use. (Mainly because some of them are not available from time to time). This one has a delicious, milky chocolate flavor, this one is sweetened only with stevia, sugar-free and delicious, this one is allergy-friendly, affordable and reliable. 

Make the flax egg in advance

Since I like to set my flax eggs for 15 minutes, I preheat my oven, then prep my flax egg(s) before starting any vegan recipe (that calls for a flax egg). This ensures that the flax egg is ready when I get to it in the recipe. 😉

Instructions

  • Preheat oven to 350°F. Line a baking sheet with parchment paper or greased foil. Set aside.
  • In a large bowl, whisk together all of the dry ingredients: oat flour, baking powder, baking soda and salt.
  • In a medium bowl, whisk together all of the wet ingredients: peanut butter, oil, sugar, maple syrup, flax eggs and vanilla. Whisk until well mixed.
  • Pour the wet mixture over the dry mixture. Using a rubber spatula, stir and fold vigorously until no flour patches remain. Dough will be soft and moist. Fold in vegan chocolate chips.
  • Using a medium cookie scoop, scoop and drop cookie dough balls onto the prepared baking sheet. Using a spoon, press down lightly to slightly flatten cookies. Optionally, press chocolate chips into the tops of cookies.
  • Bake for 12-16 minutes. Mine took 14 minutes. Transfer cookie sheet to cooling rack. Allow cookies to cool on cookie sheet for 10 minutes. If desired, transfer cookies directly onto the cooling rack to cool completely. Enjoy! Storing notes below.

    I made these cookies and…OMG, they left me absolutely speechless. They are SO DELISH all I did was change the chocolate chips for chopped chocolate since I didn’t have chocolate chips. I am definitely making these again!
